The restaurant specializes in various noodle styles prepared using traditional techniques that honor the craft of noodle making, from pulling and shaping dough to achieving the perfect texture and bite. The menu typically encompasses multiple regional Chinese noodle traditions, offering customers choices between different noodle types including thick hand-pulled strands, thin wheat noodles, rice noodles, and more, each paired with appropriate broths and toppings. Popular dishes feature combinations of tender meat, fresh vegetables, and aromatic broths simmered for hours to develop deep, complex flavors. The open kitchen concept allows guests to observe the noodle preparation process, adding an element of theater to the dining experience. Whether craving something light and clear or rich and spicy, Hi Noodle's diverse menu provides options that span the spectrum of Asian noodle traditions, delivering consistent satisfaction through quality ingredients and time-honored cooking methods.
Noodle texture is great! I ordered the ๅ้ ฑ้ข (Minced Pork Noodle) and found that the overall flavour was slightly too mild. Would have been better if there was a bit more meat too. But the saving grace is that the handmade noodle texture is very good.
Also, they reward you with a free ice cream cone if you return your tray. This is much appreciated given that these days in Singapore, most F&B establishments expect paying customers to do the work for them.
They also offer a free exchange of noodles if the taste is not suitable for you. ๐

A fantastic spot for late-night food cravings!
The grilled squid on a stick is perfectly cooked, smoky, and seasoned with a delicious blend of spices. It's a must-try for anyone who loves street food. The other skewers we ordered were equally tasty. Can't wait to go back!
It's not just noodle, it's an art!

My third visit to Hi Noodle, and itโs been great so far! The food tastes good and is nicely presented. The place is clean, and the service is friendly. I especially love the tomato soup noodles โ the broth is spot on! The garlic crayfish is delicious too. Hope you can consider adding the ๅไธ้ฆ flavor in the future. The free ice cream for returning the tray is a nice touch!
However, the white peach & lime tea tasted a bit strange โ not really to my liking.

Chefs and Service staff are very friendly and attentive towards us. Staff with pony tail even came to top up my soup and ensure my dining experience is taken care of. My first time dining here. Awesome, will come again.
Edit, you can have ice cream everytime you returned a tray. Gotta love this place so much.

Visit here all the time, their scallion oil noodles ($6.90) r great, and u can add whatever topping or sides u want just beware their added costs (range about $4 to $6). I'm a big fan of their crunchy spicy cucumbers, and their fried chicken cutlet and sausages are alright too, and on its own the noodles r abit too plain. Its more or less $10ish for the noodles, which for the quality that they r is quite worth it.
