Since opening in the basement level at 290 Orchard Road, this unique ramen concept has attracted curious diners eager to experience the marriage of Chinese noodle craftsmanship with Japanese broth-making traditions.

The inspiration emerged during a Paradise Group CEO visit to Japan, where he discovered a ramen stall serving shrimp-based broth. Rather than simply replicating the concept, Paradise Group adapted it to create something distinctly their own, pairing traditional handmade Chinese La Mian with a meticulously prepared shrimp broth that requires extraordinary effort to achieve its depth of flavour.

The broth preparation exemplifies the commitment to quality that defines the concept. Fresh large prawns undergo baking at one hundred eighty degrees Celsius for forty-five minutes before being hand-ground to fine texture, combined with premium conpoy, then simmered for more than eight hours. This intensive process extracts maximum flavour from the crustaceans, creating a broth that delivers umami complexity without the heavy pork flavours typical of tonkotsu ramen.

The signature Le Signature Trio Shrimp Ramen, priced at nineteen dollars ninety, showcases the concept beautifully with fresh large prawns, handmade ebiko prawn paste, and prawn dumplings crowning the La Mian noodles swimming in the aromatic shrimp broth. The menu also offers tonkotsu broth for those preferring more traditional ramen flavours.
