Located at #01-26/27/28 Orchard Plaza, Tetsu operates Monday through Saturday with two service periods: lunch from 11am to 2pm and dinner from 6pm to 11pm. The restaurant's Tetsu-style omakase menu features a carefully choreographed progression from clean, delicate sashimi courses to warm, savoury dishes that build in complexity and flavour depth. Standout offerings include appetizers like oyster with tomato sauce and sesame tofu, followed by pristine sea bream sashimi, silky chawanmushi, and mains featuring premium ingredients like Iberico pork presa and seasonal fish with autumn truffle.
What distinguishes Tetsu is its accessible approach to Kappo cuisine, which traditionally involves elaborate multi-course preparation. One of the best experience I’ve had at a restaurant. Fujiwara has a very warm and welcoming environment. The service was top notch, everyone was so friendly. And we got to know the chefs, Fujiwara, Laurence, Casandra; as they were very interactive and friendly. The food was very delicious and fresh.

Highly recommend the steamed beef tongue👍 our first time trying it this way, tender in a light comforting broth, unlike the usual grilled version you find elsewhere. The sashimi was thick-cut, incredibly fresh, and beautifully presented with flower petals featuring flounder, hamachi, sea bream, salmon, and tuna. The grilled black cod was nicely cooked and delicate in flavor, while the seasonal claypot rice was light with bits of charred rice adding texture and pairing wonderfully with crab meat and ikura.
A sweet finish with their Matcha Ice Cream Monaka Sand, a lovely touch you can even request a hand-drawn dessert plate for special occasions!

The quality of the sashimi and sushi is exceptional — fresh, beautifully presented, and perfectly balanced in flavor. The tempura and katsu dishes are also outstanding: crisp on the outside, tender inside, and never oily. The chef clearly takes pride in his craft and pays attention to every detail.

We tried the Tetsu Style Omakase Menu, a delightful journey through traditional flavours:

Appetiser Platter Oyster with tomato sauce, sesame tofu, deep fried unagi with sansho pepper, sea bream with sweet and sour vinegar, kimukatsugi Japanese taro with miso sauce, prawn kawariage (shrimp fish cake), and mackerel sushi — each bite delicate yet full of character.

Momo Tororo A unique dish of peach with grated Japanese yam. Its sticky, slimy yet silky texture was unusual at first, but after a few spoonfuls, the flavours grew on me.

Hairy Crab with Uni One of my favourites of the evening! The crab meat was all ready-to-eat with no peeling required, topped with rich uni for that indulgent touch.

Overnight Dried Sweet Fish Prepared right before our eyes, the charred aroma alone was irresistible, followed by its deeply savoury bite.

Beef Tongue Soup Surprisingly soft and tender with no heavy aftertaste — comforting and memorable.
Deep Fried Shrimp Shinjo Crispy toast filled with shrimp, a wonderful palate cleanser before the finale.

Barachirashi Generous cuts of fresh sashimi over vinegared rice, perfectly balanced and satisfying.

Mochi with Mitarashi Sauce A beautifully plated dessert. The mitarashi sauce, a sweetened soy glaze, was a lovely discovery that paired so well with the chewy mochi.
