Three broths into One
Tsuta's signature dashi is the heart of every bowl of Tsuta soba. Three separate broths of chicken, clam and bonito dashi are simmered under strict temperature control.
Golden Goodness
Nothing completes a bowl of ramen quite like an ajitama ("egg"). Our eggs are locally sourced to ensure ultimate freshness.
Freshly Made
Freshly made from his stone-milled whole wheat recipe on-site, Chef Yuki Onishi blends four types of specially selected wheat.
It's Different
We accompany our ramen, with Hosaki menma. Unlike regular bamboo shoots, the hosaki menma is harvested from a specific part of the bamboo head which boasts of a softer texture.
One of a Kind
Tsuta's signature Shoyu base is a one of a kind special blend, using custom-brewed Shoyu from Wakayama Prefecture, made to Chef Yuki Onishi's specifications.
Incredibly Marbled
At Tsuta, we use imported premium kurobuta loin and iberico pork belly. This part of the pig is incredibly marbled, offering the most tender of bites.
Ingredients come First
With premium ingredients come exceptional flavour. Ever the idealist, Chef Yuki Onishi rejects the idea of additives or artificial flavouring to drive a strong umami taste.
Tsuta's Signature Shoyu Soba
Tsuta's Signature Shoyu Soba is a distinctively original dish. Featuring the restaurant's signature dashi, it gives a very full-bodied yet delicate taste.

Very noisy environment as the restaursnt is located at a very open space and alot of people walking around. It is inside 313somerset mall but you dont feel much aircon. Sometimes you can feel the heat from outside. The seats are quite crampy too.
Tried the signature truffle noodles. It is $18plus++ but the portion is not alot actually. Maybe its very high-end pricing. The aburi pork also tasted very rough. Nothing fascinating and likely no more next time. Quite disappointed.
There are few flies flying around and can be quite irritating too.

First time to Tsuta and I ordered kurobishio tonkotsu ramen. It’s not flavourful and it’s very oily. The only thing that stood out was the $2 sweet corn …lol … Not a pleasant experience in terms of food, but the staffs were friendly.
A!!
Restaurant is very clean the service is well... below standard I'd say. Very difficult to get the staffs attention. I waited 5 minutes to catch the staffs attention for some soya sauce. The spoon is only for noodles so it's quite difficult to eat rice that I ordered. The food is way too expensive considering the taste, quality and portions. Although the restaurant is marketed as a Michelin restaurant I tried their signature dish the original truffle shoyu it had a strong smell but didn't really taste like anything. Overall very disappointed wouldn't come back and wouldn't recommend.

I ordered their signature truffle shoyu ramen with egg. The level of ramen here is pretty low, the broth felt light, the shoyu flavour weak. The truffle paste had a great aroma but otherwise forgettable. The earthiness was not there and it was not complementing the ramen.
The toppings and noodles were poor as well bar the egg. Chashu was tough, lean and a little cardboardy. Noodles were run off the mill hakata style thin straight noodles that did not offer any surprises. The egg was good though, perfectly cooked, well seasoned.
Overall, for a ex michelin ramen, it is very disappointing. Even though I ordered the Japanese level of saltiness, everything still felt light. It was also rare to see a ramen place without an open kitchen seeing the chefs boil noodles.
M
Had an unpleasant food experience here. The food when served, had an unpleasant strong odour, like an offensive chicken smell. But I still gave it a try... Was really disappointed to find that the ramen egg i ordered was runny and not like the usual ones and was told this is supposed to be like this. Same goes for two pieces of chicken found in the soup, which staff said its supposed to be like this. Not sure if this would be termed Michelin grade? I had the same noodles at the jewel outlet but was not like this. Also after my feedback to the first staff, no updates were given to me. Until I left to pay my bill, which I wasn't happy to pay for an unacceptable meal, I gave my 2nd feedback but still the service wasn't satisfactory. Really disappointed with food and service.

No can go wrong with this Ramen shop! Only thing is that I wish it is had at a proper seating restaurant. The location is placed in a mall where you guild hear the crowd of the passing by’s. Which could not be very enjoyable to enjoy the food and your company. Ordered the spicy teriyaki chicken ramen. this soba ramen was cooked to al denté & this broth was very well spiced. Not too heavy yet rich in it. The you could also taste the marination of the chicken too. 16$+ for this bowl of ramen - enjoyed it nevertheless

Came for the michelin star ramen, stayed for the wagyu beef and alboni salmon sushi. Oishi!
The food arrived quite fast.
Hot green tea was refillable.
The tax & service charge - my kokoro dropped !

Try their signature Char Siew Truffle Ramen Soba, the char siews were tendered, truffle soup was flavoured, noodles were chewy and q. Just right portion for a decent meal😋. Staff service are good, friendly and forthcoming. Enjoy my time and food with my frens🙂. Ard $20/- per pax think juz right in Orchard area. …

“Tsuta used to be one of my favorite ramen spots, but the quality has definitely dropped. The broth isn’t as rich or layered as before, and the truffle aroma feels muted. For the price, it just doesn’t impress anymore — no wonder it lost its Michelin star.”

I’ve walked past this restaurant in Somerset a few times but never had the chance to try it until recently when my friend and I decided to walk in. The menu features options like salmon don and ramen, and both dishes were really, really good.
The only downside was that the portions felt a little small for the price. However, the quality of the food made up for it, and overall, it was an enjoyable meal.
