We are a small, high-end omakase restaurant seeking a hands-on Floor Manager to lead front-of-house operations.
- Lead daily FOH service for an 8-seat counter, ensuring smooth omakase pacing and exceptional guest experience
- Host and seat guests, manage service flow with the kitchen, and handle VIP & guest recovery
- Train, coach and roster Service Crew / Runners / Captains; run pre-service briefings and service standards
- Manage reservations and prepayments (TableCheck) including deposits, dietary needs, corkage and special requests
- Oversee cashing-up and end-of-day reports; basic inventory for beverages and disposables
- Uphold hygiene & safety standards; prepare simple incident reports when required
- Work rostered shifts aligned to business needs (evenings, weekends, public holidays)
Requirements
- Bilingual: Fluent in English and Chinese (Mandarin) in order to communicate with Mandarin-speaking guests and vendors, and to manage Chinese-language reservations and supplier documents
- 3+ years’ FOH leadership in fine dining or omakase; calm under pressure and guest-centric
- Confident with guest recovery, VIP handling and service etiquette
- System-savvy: TableCheck (or similar), iPad POS, Ayden/online payments; basic G-Suite/Excel
- Strong people leadership, coaching and communication; punctual and detail-oriented
- Able to work nights/weekends/PH as rostered
Good to Have
- Sake/Wine service knowledge (SSI/WSET Sake or equivalent)
- Basic Japanese hospitality terms

- Typical service windows: Lunch 10:30–15:00 (Wed/Thu/Sat/Sun); Dinner 17:30–22:30 (Tue–Sun) — rostered
